The Challenge
Shan Oil, a leading olive oil producer, came to us with a painful problem troubling the entire industry: olive pomace – polluting waste created during oil production that damages soil and groundwater and costs the company significant money for treatment and disposal. What looked like an expensive environmental burden became a golden opportunity for us.
The Innovation
We developed a revolutionary product for Shan Oil that transforms waste burden into a new revenue source! We created olive flour from the pomace – the world’s first flour made from olives, extracted through smart separation of the pomace’s high-nutritional-value components. This new flour is rich in antioxidants and polyphenols, gluten-free, and perfectly suited to the Mediterranean diet.
This patent-protected development not only solves the environmental pollution problem but creates a new, promising revenue stream for the company, which is now negotiating to sell technology usage rights to major olive mills worldwide.
